Remember when I told y’all I had recipes tucked here, there and yon?

Well, this is one of those. I haven’t a clue where it came from, but I’ve been using it at least a couple of decades. Somehow, it ended up handwritten into my recipe notebook with no notes or acknowledgement as to its origins.

Whose recipe was it? Who knows.

And the name - Hokey Pokey? Your guess is as good as mine … mine is somebody needed a title for the recipe they were contributing to the fundraiser cookbook. You know the kind - published for church, school, work, etc. - and maybe it’s almost time to start dinner, her kids were doing the dance, getting on her nerves, “Maaaaama look at me”, when lo and behold the recipe gets a name.

That’s today’s story - feel free to write one of your own - I’d love to hear it - just maybe not at dinner time.

What I can definitively tell you is:

This recipe is quick, easy and it works every time.

Honestly, sometimes that’s all the story a recipe needs.

This recipe will marinate 6 - 8 chicken breasts or pork chops, 2 - 3 steaks.


I love San-J Tamari Sauce because unlike most mass-market soy sauces that are chemically hydrolyzed in just a few days, it is naturally brewed for months. This infuses the meat with a deep, rich complexity rather than just tasting wildly salty. Kikkoman Gluten-free Soy Sauce is a good alternative.


Fresh squeezed lemons are the best but if you prefer the convenience of a bottle I suggest either Santa Cruz Organic or Volcano Organic - neither are from concentrates and come closest to the taste of fresh squeezed.

If you don’t need gluten free and want the original recipe, just use any good quality soy sauce instead of the gluten-free tamari.
